You probably installed the Release Candidate (RC), which is part of the beta program. Apple Support can only see your iOS version and whether you’re in the beta program. They can’t tell how it was installed. As for Apple Intelligence, yes, you’ll need to sign up for the waitlist, but it shouldn’t take too long.

Should I just leave it alone? I don’t want to mess up future updates, especially with the official 18.1 release coming soon. Should I back up and restore to 18.0.1?

You’re on 18.1 RC, which is why you don’t see the beta tag anymore. You probably updated to 18.1 while beta updates were on and then manually turned beta updates off.

You’re probably running the 18.1 RC. Either you or someone else who had access to your phone enabled beta updates and then turned them off.
